Merry Christmas

Merry Christmas from my home to yours.

Currently, I am so far behind it does not even matter. 

Today, after going to my parent's home to stay with Mom while Dad got to get out for some fresh air to go see my youngest niece's Christmas pageant(bless his heart). Then back home this afternoon to have the entire A/C replaced. This is Florida and we require a/c all year. It has been cool all week so no big deal comfort wise . But yikes $6,700+ for a new cool.

Boat parade done,Cookie exchange party done, ornament exchange party, son's wisdom teeth removed yesterday.Christmas cake a sad failure this afternoon..Need a manicure and pedicure and to get my roots done, hi-lights and a super blow out that will last 3 weeks....never will happen.

Then... Meeting the future in-laws at their Noche Buena party, no idea what to do,what to wear, what to bring.   

I think I do fabulous flan but these are experts.... I don't speak the language. and.. Holy crap...hahhha 

But... It's good .... the future bride is a Doctor.

Only one  more Christmas party after this. I really want to see the new Mary Poppins movie,not going to happen. Did not win power ball.

Still have to shop for Christmas dinner for 14. No idea what I am cooking ,thinking chateaubriand. Never cooked this before -- not freaking out yet.  hahahhaa


We did go on a Caribbean cruise in early December, my husband thought it was a great time.... To-Get-Away-from-it-all.- He had a great time!

I did 150  Christmas cards.He will have to sleep...  sometime


But it's not a holiday's  until I start cursing. 


Tomorrow is another day !

Tonight I am a baking fool

Sugar cookies not iced or decorated  yet,snicker doodles,rum balls,peanut blossoms,  tortuga rum cake and the cake part of the Black forest cake are all cooling.

The dish washer is packed full and running. I'm finished for the evening .

I'm going to relax and test the Schladerer-Kirschwasser I bought in Germany to be certain it's not toxic and of the best quality, you never can be too careful!

I hope not! lizards are everywhere lately....There is always that chance. :blink:I have no confidence in the new cleaning lady. 

We entertain a lot and I'm not usually this wired.

But, I am freaking out a bit with future in-laws coming. I want every thing to be perfect, Plus I want to be able to have fun as well.

I wish I could relax and say "que sera sera",but I'm not like that.;)

Rum Holiday Cake Recipe

Once again this year, I've had requests for my Rum Holiday Cake recipe so here goes. Please keep in your files as I am beginning to get tired of typing this up every year! (Made mine this morning!!!!)

1 cup sugar
1 tsp. baking powder
1 cup water
1 tsp. salt
1 cup brown sugar
Lemon juice
4 large eggs
1...large bottle of Rum You may need more
2 cups dried fruit

Sample a cup of Rum to check quality. Take a large bowl, check the Rum again to be sure it is of the highest quality then Repeat. Turn on the electric mixer. Beat one cup of butter in a large fluffy bowl. Add 1 teaspoon of sugar. Beat again. At this point, it is best to make sure the Rum is still OK. Try another cup just in case. Turn off the mixerer thingy. Break 2 eegs and add to the bowl and chuck in the cup of dried fruit. Pick the fruit up off the floor, wash it and put it in the bowl a piece at a time trying to count it. Mix on the turner. If the fried druit getas stuck in the beaterers, just pry it loose with a drewscriver Sample the Rum to test for tonsisticity. Next, sift 2 cups of salt, or something. Check the Rum  Now sh*t shift the lemon juice and strain your nuts. Add one table. Add a spoon of sugar, or somefink. Whatever you can find. Greash the oven. Turn the cake tin 360 degrees and try not to fall over. Don't forget to beat off the turner. Finally, throw the bowl through the window. Finish the Rum and wipe the counter with the cat.
